CHICKEN: Mexican Recipes

I bought chicken the other day and want to make something with it for dinner tonight. I looked at my aunt's Chicken Spaghetti recipe, but we had spaghetti last night... So I got to thinking about my cousin's Mexican Chicken recipe made with Doritos. Stuffed Bell Peppers

Danny wants Stuffed Bell Peppers for supper tonight. I made him some years ago and he critiqued me so much I vowed to never make them again. I brought him some home from church recently that Mrs. Tucker made and he must have liked them enough that it got him to hankerin' some more! :)

So, I'm searching for a recipe and man there are a bunch:

Dad's Stuffed Bell Pepper Recipe

Mom's Stuffed Bell Pepper Recipe

This one is made with crackers and has a cheese sauce that you pour over the end product.

This one uses stuffing/breading mix and cheddar cheese or tomato sauce with parsley.

He wants one that has cheese AND rice. This one has brown rice & tomato sauce, while this one is more complicated but with white rice.

This search is for "stuffed bell peppers" & this one is for "rice stuffed bell peppers".

This recipe has rice, tomatoes and corn!**

**I'm trying this one, but Danny plucked some Rosemary from the yard and wanted me to include it, so in it goes. I'm using Mexican corn instead of sweet and Rotel instead of just tomato juice. So we'll see how it turns out!

This one has rice, tomatoes, cheese and Worcestershire sauce. (Meanwhile I found this...)

Here's a Cajun recipe made with Rotel and sausage! And this one is made with a jalapeno cornbread mix.

Danny's dad went to the hospital today. His nurse said that his kidneys may be failing...

Wedding Punch

Mom came over and brought a recipe book that had a stuffed bell pepper recipe in it and she found what she thinks was the Wedding Punch recipe she used at my wedding:

1 - 12 oz can frozen orange juice diluted with 2 cans of water
1 - 12 oz can frozen lemonade
2 c. pineapple juice
½ c. sugar
½ c. water
1 quart of gingerale

Mix orange juice, lemonade and pineapple juice and set aside. Boil sugar and water for 8 min. Chill until ready to use. At serving pour gingerale into juice mixture. Freezes well without gingerale.
**Yields 1 gallon or 30 cups.

Tacos

We already had fajitas one day this week, but I asked Danny what he wanted for supper tonight and he said tacos. So, tacos it is!

Actually it turned out that some of the kids ate their stuff in tacos and others used tortillas and made burritos. Oh well.

It seems anything I eat anymore gives me heartburn...

SANDWICH: Fried Peanut Butter & Banana

One of the neighborhood boys was over here this afternoon (actually he's still here, along with 3 other kids that aren't mine!) and watched an episode of Paula Deen with me. She was doing stuff with bananas and she made an updated version of Elvis' favorite sandwich: a fried peanut-butter & banana sandwich. She added honey to her recipe and sprinkled cinnamon. Me and the kid started jonesing for one, but I didn't have any honey. He said the little store around the corner had some, so off we went! :)



They turned out YUMMY, but I would have done 2 things differently from Paula. 1) I would have toasted my bread before I spread the mixture on it (the butter made our bread too thin and let the peanut-butter spread ooze out) and 2) I would have had a glass of milk ALREADY poured. (Cause, man, this stuff is THICK and makes ya thirsty!



P.S. The kids are always telling me that I'm crazy for taking photos of my food. And Westley, the kid who helped me make the sandwiches today, even made this comment. So, I just showed him my blog and he said "Oh, cool. Have any of your friends commented?" Yeah kid. This cooking blog is JUST LIKE MySpace... :) I was shocked to see hear him comment on how many of the meals on here he had had with us this week, but hearing him say "and that was really good, and that..." made it worth it - I guess... ;o)

Stroganoff w/Quick Alfredo Sauce

My sister made a big pot of Stroganoff one night and shared her leftovers with us. My husband liked it so much that he made a special request of it and now we have it frequently. My sister buys Alfredo Sauce in a jar, but I found a quick recipe online which I like (which is just as quick and cheap):





I add basil to my sauce (as I add basil to just about anything I can!). And I usually use Kroger's pre-made meatballs (in the frozen section), but today I used Armour's (orig. flavor vs Italian) and they are way superior. But I caught them on sale for $2.99 for a bag of 32.

So, this is what the kids and I made for lunch today. Devyn unloaded the dishwasher. Cierra stirred the sauce. I cooked the pasta & meatballs (in the microwave!) and mixed everything together. We can be such a team - at times...

Southwest Stack

The kids aren't going to church with me tonight. Danny had band last night so they're staying home with him. Pagans! I fooled around on the computer all day and forgot to set something out for dinner and Cierra's been asking for her "favorite dish", so it looks like I'll be making Southwest Stack after all... (Besides, apparently they're having a bunch of friends coming over to keep Danny company! ;o)
